An Easy and Healthy Basil and Spinach Pesto Recipe

Happy Thursday friends! A couple of weeks ago I shared about how I have been eating a lot of pesto. I received a ton of emails and messages asking me for the recipe so today I wanted to share it with y'all. It is easy to make and is extremely healthy, especially if you are like me and you are wanting to get more greens into your body. 

1/4 cup organic pine nuts
1/16 cup organic walnuts
1 and 1/2 cups organic basil
1/2 cup organic spinach
2 tablespoons organic olive oil
1-2 tablespoons of lemon juice
1 tablespoon water
1/4 tsp salt (you can add more if you like more salt)
1/4 tsp pepper

Blend together in a food processor and chill in refrigerator for at least 30 minutes before serving. We have found that letting it sit overnight is the best. We use the Hamilton Beach 12-cup stack and snap food processor that we purchased on Amazon. You can find it HERE. It is wonderful. It is easy to use and easy to clean!

I use this as a dip with veggies, on sandwiches as a substitute for mayo, as a garnish for fish, etc. It takes about 5 minutes to make and is the easiest recipe.

I have also substituted in different greens besides spinach including kale and dandelion greens. The recipe is so easy and can be modified for your health needs.
